Big VEGGIE FEAST...another!!


2 x white onions- finely slices
4/5 x Courgettes (I combined both yellow and green)- Finely slices- use a food processor if you have or madalin
2 x mugs of rice- 
3 x mugs of vegetable of chicken stock
1/3 of a large pot of creme fraiche or a big generous dollop
Salt & Black Pepper
Mature cheddar  or Gruyere grated on top

Heat the oven to 180 and melt butter and a dash of oil in a frying pan, add the white onions and cook until transparent and sticky.
Rinse your rice under cold water to remove starch- water should run clear when done. When the onions are ready, add the courgettes along with the rice. Stir and pour over hot stock. Turn up the heat and cook for 5 minutes.
Take the pan off the heat and gently stir in the creme fraiche and big handful of grated cheese- Make sure you salt and pepper it well.
Add it all to a baking dish. Keeping the majority of the courgette on the top- it the rice moist. Sprinkle over the rest of the cheese and bake for 40 minutes until golden and bubbling and all the stock has been absorbed.



I did a bit of a weird veggie buffet here... Cavelo nero with garlic and butter- Steam/cook in about 1cm of boiling water on a medium heat add a lid and let it half cook/steam for 4mins. It stay crispy this way.


Avocado /guacamole...3 x very rip avocados with yellow cherry tomatoes (you can use whatever you can find-choose a deep red version so they're nice and ripe and sweet) add 1 x red chilli- medium sized and remove the seeds so it's not too spicy or keep if you like the kick! Add a big handful of coriander and a glug of red wine vinegar. Season with Salt and pepper.



Roast up some slices of aubergine in olive oil with salt- they take about 30/40 mins in the oven on 200. Slice them about 1/2cm thick so they don't fall to pieces. Roasted red pepper is yum too and can be done the same way but just takes less time- 20/25mins.


Mmmmmmmm a veggie lesbian meal just like that...that's un PC right!! Eeekkkkkk!!!
