Crispy Duck Soup with Kaffir Lime leaves, Ginger, Chilli & Coriander


Five Spice
Salt & Pepper
Grond Ginger
Slice 1/2cm appart into the fatty side
Cook off the fat until Crispy
10/15mins Put lid over so the Duck Breasts cook through (But NOT too much)


Garlic 2 Cloves
Ginger 3cm Finely Slided
Fresh Kaffir Lime Leaves Finely Sliced
Lemon Grass
Tom Yum Paste
Onion
Brocoli
Cherry Tomatoes (add last)
Spinach (Add Last)
Mushrooms
Add ALL veg no more that 5mins before serving so it's not over cooked
Cooked Rice Noodles before adding 
Add fish sauce to taste
I have found these amazing Vietnamese Stock cubes, I kinda guess what ones work with what (They're in the pic above- and cost 55p for 4-They're the best)

Nans NEXT LEVEL Victoria Sponge- I did 3 slices, one sitting.


Nan's Sending me the recipe...she says it's all done in the Kenwood mixer, thats why it's so good and she never gets it wrong.

BBQ NO3- Jerk Chicken, Home Made Burgers, Venison Steaks, Chilli Shark, Potato Salad, Coleslaw, Salsa



1 Red Onion
Handful of finely chopped parsley
Salt & Pepper
Origano
Sweet Paprika
2 Eggs
A load of Mince Beef or steak mince (for extra lean) 


Salsa
Cherry Tomatoes
Red Onion
Red Chilli
Coriander
Red Wine Vinegar

Coleslaw-
Red Cabbage
White Cabbage
Carrots
Sesame Seeds 
Red Wine Vinegar
White Pepper



Jerk Chicken 
Big Glug of Soy Sauce (Dark)
1 or 2 Scotch Bonnets (they're hot, so red if you prefer less spicy)
4 Garlic Cloves
Tsp of Sugar
Big sprinkle of All Spice
1 Onion
3inch of fresh ginger
Add it all the blender

Lamb Tagine with Garlic & Thyme Cous Cous & Sweet Mozzarella Rocket Salad


Lamb Cubed
Fresh Thyme
Salt & Pepper
Powdered Cinnamon 
2 Star Anise
Sweet Paprika
Chilli Powder
Kidney Beans
Tin Plum Tomatoes
Red Onion
Parsley
Cherry Tomatoes
Cook on 150 for 4hrs

Sweet Potato & Salmon Fishcakes, with Thai Rice Noodles....


Lemongrass x1
Garlic x 1
Red Chilli to taste
Cooked Sweet Potato x1 or 2
Uncooked Salmon
Coriander Roots
Salt & Pepper
Lime Zest
Blend all together, add a raw egg to bind if needed or a sprinkle of flour if too sticky
Roll into small patties & cover in breadcrumbs
(Home made blend stale bread, mix with parmesan & parsley & black pepper)
Pan fry & keep warm in the oven while you do the rest


Cook in boiling water the rice noodles, rinse with cold water once cooked, so they don't stick together
Add fresh coriander, a big bunch, roughly chopped
Make up the sauce-
4 tbsp of fish sauce
4 tbsp of light soy sauce
Red chilli chopped & added
Spring Onion
Plum Sauce to sweeten
White pepper
Roast peanuts & sesame seeds in a dry frying pan, then crush and add once the sauce has been added to the salad.
