A Good Veggie Option- Filo Pastry Feta Parcel things




Baked Filo Pastry parcels with Feta, Spinach & Nutmeg
Serve with a big hearty Salad


Mix Feta with -
Half a lemon zest
Lightly cooked Red/White Onion 
Lightly cooked spinach (try and get rid of as much of the juice as possible, drain on kitchen towel)
Salt & Pepper


I used up what was in the fridge -
White Cabbage
Sprouting Broccoli (Blanch in hot water)
Sliced Cherry Tomatos



Make parcels with the filo, use melted butter to stick the folded layers...and cover the top with melted butter, bake in the oven for 25mins, grill them for 5mins if they don't look crispy enough.

Quick Dinner With Calories


To Feed 6-8 

Slice 2 packs of bacon in a pan until they're crispy
ADD
2 Finely Slice/cube a white onion 
5 Cloves of Garlic, finely Chopped
Lightly Fry until Translucent-Not browned

Get your pasta cooking

Whisk 6 eggs together, add Salt, Pepper and then finely grate a load of parmesan cheese into it. DON'T be stingey!

Once the pastas cooked drain and add the bacon onion and garlic then the whisked eggs and parmesan, add a big bunch of freshly chopped parsley...AND SERVE.

Hangover Breakfast Buffet...


Fresh Rocket
Baguette
Turkish Loaf
Saute Mushrooms
Plum Tomatoes
Fried Eggs
Grilled Bacon


 I used to have fried egg on toast with plum tomatoes as a kid and had forgot about it...I got greedy with this one but it was a healthyISH and YUM, this the Goonies & the couch for the day, IDEAL on a hangover!

Easy Fresh Chilli, Basil, Tomato & Crispy Squid Pasta-One for a dinner party


I keep a bag of frozen Squid from the Vietnamese  shop in the freezer and it's perfect for this dish, only £5.50 for a huge bag.

4/5 Large Whole Cleaned Squid Sliced however you like. (Into Rings or chunks) Dry it off on kitchen paper.
Rinse it once defrosted then mix salt, loads of fresh black pepper, lemon zest into either flour or cornflour and add the squid. 

Heat up some oil in a frying pan and add one piece first to make sure it's hot enough- it should fizz.
Cook until golden 2/3mins

Drain on kitchen towel 


Tomato Sauce With Chilli

Finely Chop the following-
Onion Red or White
Red Chilli 1 or 2 depending on how hot you like it
Whole Red Tomatoes (You can put them in boiling water for 3 mins to remove the skins, but I like it with)
3 Cloves of garlic
1 Tin of Tomatoes
1 big teaspoon of sugar
Salt & Pepper to taste
Add Fresh Basil, we've greek basil growing in the garden and it's really fragrant, tasty!


YUMMMMMMMMM 


Squeeze a bit of lemon on top, add a little extra grated zest & Salt & Pepper (If you're obsessed with S& P like I am!!)
