Moroccan Meatballs with Spicy Squash Coleslaw and Mint Dip. Also on London Fashion Week Daily http://lfwdaily.com/2011/09/17/fashion-week-feed/
To make the meatballs:
Get the largest pack of lamb mine you can (so you'll ideally have leftovers, although unlikely, these are moorish)
Add the following to the lamb or beef mince:
Cumin powder 1 heaped tsp
paprika 1 heaped tsp
1/2tsp of chilli powder
Finely sliced red chilli (seeds out so its not too spicy)
1/2 tsp of ginger powder
1/2tsp of cinnamon powder
tbsp of brown soft sugar or honey
2 eggs to help it bind and stay together
Salt & Pepper -be generous
Mix together then let marinate for an hour in the fridge
Then roll into balls- not to big as they'll take longer to cook, 3cm ish maybe.
Pan fry for around 5 mins in oil until golden all round then add to the oven for 15mins to cook through on 200.
Make sure you don't over cook them as they will dry out.
Grate half a cucumber into natural yogurt and finely slice a handful of mint into it with a tsp of sugar and salt
For the Coleslaw:
Slice the squash into 1.5 / 2cm thick pieces and roast in the oven- sprinkle with oil, paprika and cumin powder and cook on 200 for 20mins, you want them to be crispy.
Do the same to the carrots but sprinkle with sugar so they come out golden and sweet.
Finely sliced the red cabbage, add a glug of white wine vinegar, salt & pepper and white pepper. Add a squirt of salad cream- we're huge fans of it at work, can't get enough!!
Mix it all together then add some chopped parsley & mint.
Frying up the Meatballs
Make sure you dice the onion finely (I could have probably done it smaller as this helps the meatballs stay together)
Heat pittas (wholemeal for healthiness) and add a bit of everything...
I cooked the corn on the cob for about 10mins in boiling water or until i could pierce the skin without too much hassle. then reheated with the meatballs once I got to the office and added butter.
Sweet, slightly spicy and fresh coleslaw
The House of Holland Team (minus me) prior to feasting and 2 days prior to the show...
The ladies giving it the thumbs up...people in fashion do eat!!
3rds back at my desk :-(

Real Kebabs and REAL Kebabs!!!
Brazilian Butchers on 223 Mare Street Casa De Carnes- AMAZING meat & sausages. £5 for all this meat!
Chop the beef into even sized cubes then marinates with olive oil, freshly sliced garlic, oregano, salt and black pepper, cover with clingfilm and leave in the fridge for half and hour or as long as you can.
Ripe Cherry tomatoes on the vine, my corner shop sells these and they still smell tomatoey (nowt like tescos!!)
Home made Garlic Mayo-
Mayo
Spoonful of dijon
2 finely grated cloves of garlic.
Salt & Pepper
Coleslaw-
Finely grated white cabbage
Grated Carrots
Red wine vinegar
Salt & Pepper
Cheat Chilli Sauce-
Chilli Oil 1tbs
2 Glugs of Sweet Chilli Sauce
3 Crushed Cherry Tomatoes
Tomato & Caper Salsa
10 or so Cherry Tomatoes finely sliced
Bunch or coriander finely sliced
1 Lime squuezed
Rice Wine vinegar or white wine vinegar big splash to taste
Gently caramelise red onions in olive Oil...as an added extra.
Heat your griddle pan so it's super hot, give it a good 10mins to heat through or until it starts to smoke slightly then add the skewers of beef, allow to cook for 1/2mins then turn over and do the same on the other side, I like it rare and this cooks it just right. The meat can always sit and rest if everything else isn't quite ready, just cover with foil.
-Make sure youre warming your wraps on a low heat in the oven.
Salsa
And then the REAL KEBAB story...late night Dalston (the only reason I went out)
Calum casually going for the double...chip and kebab in in one!!
Agatha not dicking about either, getting straight in there...
CHIPS!!!
WANT IT ALL.
Thumbs up!! Nice one guys, looking good!
Randoms after a big one...I imagine!
Making it...
Agatha, Angel Face, still this gorgeous at this time of the night in harsh kebab lighting..why so bright??
The sign of a good night, someones treated themselves to a late night sit in meal :-)
Real nice!
This isn't a second one that I got for the walk home, I ordered mine later...BUT I DID!!
That belts already tight :-(

The PIE...
Make sure your meat is dry before you salt & pepper then gently brown it in the pan all over, then sprinkle with flour add the following:
Chopped Garlic 2/3 cloves
1 White Onion
2 Sticks of celery finely sliced
2 Carrots
Fresh Thyme
Fresh Bay Leaf
Save the button Mushrooms as add later so they don't disappear and cook to nothing.
Add Beef oxo cubes x 2
Add a big glug of red wine
Let it Cook 2 1/2 hrs on 180 in the oven or keep on a medium/low heat on the hob.
Cook until the meat is tender.
Ted keeping an eye on things, very interested in the cooking...
Let it reduce by half/ish and keep tasting it, make sure it's rich-If too runny mix in some cornflour- add the powder to water stir it up so there's not lumps then add it to the stew.
Part boil Potatoes 15mins in boiling salted water, then let the potatoes cool, give them a light shake in the pan so they're bashed up a bit then pour the oil over the potatoes, make sure they're covered all over, then add numerous bulbs of garlic and fresh rosemary.
Roast for 45/50mins until golden turn every 20 or so minutes.
Roll out the pastry -use whatever you can if you haven't got a rolling pin. Add crispy fried sage and grated cheese for extra calories.... You can roll pretty much anything into the pastry including nuts, herbs, fried onions.
Cook for 10/15mins but keep an eye it, I put foil in the bottom so the bottom didn't rise, I probably didn't need to cook this first.
Cooked...then add your filling.
Make it fancy.
Cabbage, greens are a must with pie
Finely sliced/shredded is also...
Perfect crispy potatoes... :-)
Tips for Pie cooking:
Try to make sure you get the pie central in the oven so the pastry cooks evenly
When rolling the puff pastry try and make sure it's evenly rolled out so one side doesn't puff up more than the other.
Make sure your inside isn't too runny (think that's more of a preference thing)
Keep a good eye on the pastry when its cooking, make sure your ovens hot enough.
YUMMMMMMMMMMMMMMMM
